Wheat Flour – 1 1/2 cups
Palak – 1 medium-sized bunch
Onion – 1 (medium)
Curd – 4 tbsp
Sambar Powder – 1 tsp
Garam Masala – 1/2 tsp
Chilly Powder – 1/4 tsp
Turmeric Powder – 1/4 tsp
Ajwain / Omam – 2 pinches
Salt – to taste
Oil – 1/2 tbs
Jeera – 1/2 tsp
Oil – as required
Clean, wash and chop palak. Heat a pan. Add 1/2 tsp of oil. Add Jeera; let it pop and add palak; sauté them on medium flame until it becomes soft. Turn off and let it comes to room temperature.
In a wide bowl add wheat flour, palak, onion, Sambar Powder, chilly powder, garam masala, turmeric powder, ajwain (omam) and salt. Mix well without adding water.
Now add curd and mix well to a crumbly mixture. It will look as shown in the below picture.
Add water little by little and make a smooth dough. When the dough is 80% done, add 2 tsp of oil in your hand and continue to make soft dough. Keep it covered for 10 – 15 minutes.
Heat a tawa. Pinch out a lemon sized dough and roll out as we do for chapatis. Place it on the tawa and drizzle some oil. cook on both sides. continue to do for the remaining dough.
Serve hot with curry of your choice. I served it with curd, pickle and tomato sauce.
